The Estate Fumé Blanc is selected from different blocks across To Kalon Vineyard in Oakville. The wine is barrel-fermented, with a portion fermented in concrete egg to help preserve fruit freshness. Aged for 10 months in 20% new French oak with generous bâtonnage, the wine carries a touch more weight as a result, offering creamy orchard fruit of apple and pear, with hints of melon de Bourgogne and white peach. Notes of white flowers and lemon verbena lift the aromatics, while a regal, creamy texture is supported by vibrant acidity and a long, candied mineral finish.
