Here is an expressive, mineral-driven, savoury sparkling California wine from the 2013 vintage. Utterly enticing toasted hazelnut aromas mingle with a lavish saline quality. Split evenly between Chardonnay and Pinot Noir, it's the Pinot that brings intense grip, a bit of colour and wonderful texture. Layers of dried orchard fruits, crushed toasted almonds, and caramel with burnt honeycomb, all balanced by a searing backbone of acidity. The dosage wine used in the L’Ermitage Rosé was the 2013 wine liquor, aged for 7 years in a French oak cask. Following disgorgement, L’Ermitage was aged an additional six months on the cork prior to release. 3.9% is aged reserve wine from 2011. The alcohol is 12.6%, the pH is 3.07, and the dosage is 8 g/L.
