Historically, Scharffenberger Cellars’ prestige cuvée was a Blanc de Blancs. When winemaker Jeffrey Jindra joined the estate, he was keen to reintroduce this style, hoping it would evolve to tell a new story rooted in the estate. The fruit is drawn from estate vineyards planted directly outside the winery, blended with additional fruit from Hopland. The wine spends 2.5 years on the lees, undergoes full malolactic fermentation, and is finished with a dosage of 8 g/L. This is not a wine made every vintage, but only when conditions allow. In the glass, it is fresh and expressive, opening with citrus fruit and crushed Marcona almond notes. A richly frothy, ultra-creamy mousse builds with intensity and volume before resolving into a beautifully crisp, saline finish that brings focus and precision.
