The Beckstoffer Missouri Hopper Vineyard Cabernet from Sign of the Dove, crafted by winemaker Jesse Katz, is the softer of the two Beckstoffer Vineyards wines from the winery’s portfolio. (The other is Georges III.) This wine has more of an earthy richness too, with the same full-bodied decadence, rich black fruit (blacker here perhaps), nuanced by sagebrush, graphite and anise. The oak profile is darker, toastier, more luxurious, with superfine tannins that help elevate the fruit profile, growing more pronounced through the finish of dark chocolate, sea salt and scorched earth notes. I think Beckstoffer purists will gravitate to this wine, while the Georges III is a bit brighter and more suited for a meal. You’ll want this wine on its own or, maybe, with a cigar at the end of the night.
