It is salty and fresh on the nose like the Ligurian seaside, with notes of flinty smoke and a spritz of Amalfi lemon. Smoky grilled lemon peel is on the wonderfully textured palate. It is brilliantly salty with intensely ripe pear flavours, bee pollen, and a finish of toasted almond.
