Voluminous but not dense, with a naturally high acidity due to early picking. Its chiselled structural integrity is thanks to the cool coastal climate, balanced by ripe fruit. A lighter style but intensely mineral and acid-driven on the front palate. Tart apricot, crisp yellow apple and lemon chiffon fill the mouth with a pleasantly ripe, filling flavour. The finish is mouth-puckering and slightly oceanic. Drake Whitcraft has a minimalist approach to winemaking, guiding gravity-fed free-run juice directly into neutral French oak barrels, where it then rests for 18 months undisturbed.
