This 100% Cabernet Sauvignon is sourced from Beckstoffer Georges III Vineyard (Winemaker Jeff Mangahas notes that the team began working with Beckstoffer fruit in 2016), and is aged for 19 months in 100% new French oak. I want to extract everything out of the grape so I do not have to fine or filter, and we work really hard to get what I want out of the ferment and take care of the tannin structure, Mangahas explains. The wines are racked once for blending, then returned to barrel and racked again just before bottling. The 2023 opens with beautifully composed aromatics of red cassis, cocoa powder, violet and sagebrush. On the palate, it is exceptional, defined by finely detailed, pixelated tannins with a cocoa-powder edge that resolves seamlessly through bright, juicy acidity.
