Grapes are destemmed into whole berries, with each clone separated into individual vessels for native fermentation, receiving one to two punch-downs per day. After 18 days on the skins, the free run is drained, and the remaining pomace is lightly pressed to the barrel separately. The wine undergoes native malolactic fermentation and is aged for 17 months in barrel, 15% of which is new. The bouquet is positively alluring, with red cherry fruit, luxuriously spiced cedarwood, espresso bean nuances, hibiscus tea, and orange oil. Broad and mouthfilling, it is medium-bodied with silky, succulent fruit, excellent mid-palate depth of concentration, and an everlasting flavourful reach that fills the senses. A saline, sea-spray minerality lends lift and tension, enhancing the finish. Quite an exceptional expression from the Sonoma Coast. Xander Soren Wines was founded in November 2022 by Xander Soren, a former Apple executive who spent over two decades helping launch landmark products, including iTunes, iPod, and GarageBand. In collaboration with winemaker Shalini Sekhar, the portfolio of Pinot Noir-based wines is crafted to pair gracefully with Japanese cuisine.
