Whole-cluster pressed using a gentle Champagne cycle, with bâtonnage every 30 days and 100% malolactic fermentation. Aged nine months in French oak, of which 25% is new. The wine's rich golden colour is a harbinger of things to come: ripe tropical fruit aromas mixed with sea spray. Medium to full-bodied with candied Meyer lemon peel, apricot cream, creme brûlée, and racy acid tension. A real bargain.
