This estate-grown Chardonnay is sourced from The Knoll, a small sandstone hill in Lahoma Vineyard that Apollo’s Praise considers its best terroir. Rather than VSP, the vines are Umbrella-trained, providing more shade and helping maintain acidity. The fruit was cold-soaked overnight and fermented in large-format French Oak before ageing for ten months with consistent batonnage. The care taken can be found easily in the glass through the depth of body and flavour. Notes of grilled pineapple balance citrus pith, toasted almonds, and savoury herbs in this almost opulent, certainly captivating take on cool-climate Chardonnay.
