Rosé

A limited production of this Blaufränkisch and Merlot blend. After a two-day cold soak, the juice was bled off and began fermentation. This method is also known as saignée (or to bleed in French). In this case, the result is a richer, more robust rosé reminiscent of Tavel. Notes of red cherry, grilled watermelon, and mixed berry jam. A slight salinity and acidity provide lift to the palate.
