Billsboro’s 2023 Chardonnay is a bright spot in an otherwise challenging vintage that brought late-season frost, wildfire smoke from Canada, and sunburned grapes across the region. The grapes were sourced from Sawmill Creek, located in the region’s “Banana Belt”, which offers southwest-facing slopes and heightened ripening capabilities. This unoaked chardonnay was fermented in stainless steel and aged for 2 months on lees, resulting in a fresh, crisp, dry wine with body. White flowers and citrus zest on the nose are echoed on the palate with notes of apple, melon, citrus fruit, and salt, begging for a seafood pairing.
