The new vintage of Chëpìka sparkling Catawba is much more polished than previously, with an elegant nose featuring bright notes of apricot and fresh flowers. This release is the first vintage of traditional method production instead of pét-nat. A new technique has eliminated any aggressively foxy, herbal or tart edges to the Catawba - Kendall used a small amount of grape sugar as dosage to tame the Catawba and help manage the grape's acidity. Pale golden colour, solid mousse, crisp acidity, light body and moderate alcohol make this a pleasant, refreshing take on this old-school grape.
