Most of the Saperavi grapes for this wine are grown on Seneca Lake, although a small percentage are from the 60-year-old vines planted by Dr Frank himself on Keuka Lake. The grapes are destemmed and manually punched down during the fermentation in open-top vats, then aged 16 months in French casks, 20% new. This grape variety (native to the Republic of Georgia) has coloured juice, producing an inky black wine with pleasant mulberry fruit and a savoury, cedary edge. The texture is firm and slightly astringent, but the finish has a rustic charm.
