This wine is a lovely example of the potential of traditional-method sparkling wine from the Finger Lakes. The classic blend of 63% Chardonnay and 37% Pinot Noir (all from estate vineyards) is picked by hand, pressed as whole clusters, and carefully fermented before aging over three years on the lees. It is dosed at three grams. There are attractive notes of almond, cream, and toast on the nose, with a silky texture, firm acidity, and a tender, lilting finish. This wine is refreshing now, but has the substance to age in the bottle as well.
