Rosé

A fabulously well-made rosé. The Merlot-dominant blend (53% Merlot, 19% Cabernet Franc, 13% Chardonnay, 5.5% Riesling, 5% Cabernet Sauvignon, 4.5% Pinot Noir) is picked early and fermented to 12.8% alcohol. The colour is strictly done on the press, and the wine is handled without pumping to retain a bit of CO2 for natural freshness. The result has a lilting red berry fruit character, floral notes, and admirable restraint to the bone-dry palate (less than 0.5g/L of residual sugar).
