This is the first Pinot Noir released by Master of Wine Nova Cadamatre at Trestle Thirty One, and it’s a knockout. This wine exhibits robust notes of blue and black berries, cherry cola, mushroom and churned earth, with a touch of vanilla. Tannins are well-integrated, and the acidity is nicely balanced, making this wine excellent with or without food. The fruit was sourced from Six Eighty Cellars on Cayuga Lake. The juice saw 10% stem inclusion and a 15-day fermentation with hand punchdowns. It then went through malolactic fermentation and 12 months of aging in a mix of new and neutral French oak. Just 48 cases produced.
