The single vineyard bottling from Seven Springs is superb, with aromas of passionfruit, lime peel, coconut water and crushed mint. The texture is lively and bright, with enough weight to impress but no sense of heaviness. The grapes come from the H Block on the north side of the property and are a combination of Dijon and old-school Wente clones vinified together. They are foot-crushed, pressed very firmly and fermented in French oak before ageing for a year in cask and six months in tank. This superb wine is drinking now and should continue to improve for years.
