This incredible Pinot Blanc begins with a fresh, citrusy scent reminiscent of an icy lemon granita. The wine’s crisp, nimble mouthfeel and flavours of tonic water and a citron peel on the rocks are also enlivening. The wine is fermented in 80% neutral oak and 20% stainless steel, then aged sur lie with occasional bâtonnage, giving the wine a surprisingly rich texture to accompany its zippy acidity. If you think you don’t care for Pinot Blanc, try this one. If you don’t like it, I will never trouble you again.
