This wine opens with a reasonably deep colour and a pronounced raspberry and blackberry fruit with some noticeable influence from cask aging on the nose. The fruit is carefully destemmed and then fermented in semi-carbonic maceration in a sealed concrete vat to bring an 'infusion' in emulation of Clos Rougeard to preserve freshness and acidity while retaining structure and fruit. The wine is pressed off and aged for a year in cask before being bottled unfined and unfiltered. The result is beguilingly approachable yet should age well.
