From the estate’s 34ha Demeter-certified biodynamic vineyard. About half the fruit is kept as whole bunches, and fermentation is completed with native yeasts, then the wine is aged for 10 months in 20% new French casks. Bright and fresh with sweet-tart cherry aromas and an overlay of sensuous floral notes. The texture is silken and elegant, with an emphasis on finesse, and it leads to a subtle but lingering finish.
