The grapes here are sourced from the Bunker Hill vineyard in the South Salem Hills, picked early to preserve freshness, and fermented in a combination of large and small casks (16% new) before aging over two winters. There is a pronounced citrus peel aroma on the initial attack that opens up with notes of chamomile and marzipan with time. The texture is lively and fresh, but the wine is not lacking breadth or substance. This wine will age well indeed.
