An elegant rosé from the Mineral Springs site and the wonderfully cool 2019 vintage. Persistent mousse and a wonderfully salmon-tinged hue introduce a sparkling rosé that offers decorative floral aromatics, savoury dried lavender and sweet orange blossom intertwined. There's a hint of almond pastry cream and toasted brioche. The palate has a tremendous balance; a sweet orange cream is punctuated with piquant tones of blood orange and subtle spice.
