This 100% Chardonnay has spent four years en tirage and was disgorged in the autumn of 2025. A single vineyard sparkler, it comes from Temperance Hill in the Eola Amity Hills, a high-elevation site that is organically farmed. So opulent. Toasted hazelnuts, rich ripe pear flesh and notes of fresh brioche. The palate dazzles, intense pastry cream, a flourish of nutmeg-spiced pear and warm baked bread are lifted through the finish with an almost umami note of preserved lemon and ample mousse.
