Jim Law is a pioneer and legend in the state, and this 2020 demi-sec shows what experience and patience can produce. Grapes are grown at 400 metres (1,300 ft) on granite soils with excellent drainage for more concentrated flavours. When you open the bottle, it immediately reveals a bouquet of orange blossom, clover honey, and spiced pear. This is an off-dry style where the residual sugar provides structural weight and viscosity rather than cloying sweetness. The acidity provides a backbone, driving the fruit through a long finish. Outstanding ageability here, it could go another decade easily.
