This Sauvignon Blanc sees time in the barrel fermenting on the less, giving it ample heft. It has plenty of attitude and a funky personality. Sauvage aromas of oysters and brine, chipped flint, and rich, ripe guava. The palate shows ginger and preserved Moroccan lemons. Nuance and texture make for a well-knit complexity, and fruit is subdued alongside minerality and umami depth. There's a finesse that counterbalances this wine's feral nature.
