A pursuit of complexity, with careful, layered winemaking. Whole cluster, co-fermented 115 and Pommard clones from the cooler, higher elevation Breezy Slope vineyard in Walla Walla produce a delicate vitality. Fermentation across a variety of materials and shapes (stainless steel, neutral barrel, and egg shaped vessels). Lees aging before (10 months) and en tirage (22 months). Croissant, apricot tart, lemon curd, Pink Lady apple, honey, and white flowers on the nose. Apple cake, quince, lemon, and wet gravel on the palate. Fine bubbles. A lovely, creamy wine of texture and balance.
