Firm, finely textured bubbles on the palate with a well-integrated, creamy mouthfeel. Complex notes of honey, toast, baked apples, white raspberry, caramel, almond. A wine of delicacy and balance from a hot, challenging vintage, and a testament to Sherry's craft as a sparkling-only winery, where the production is small, the bottles are hand riddled, and sole employees are Sherry and his wife, Miguele.
