The Old Vines bottling from Mark Ryan shows deference to Washington's older Cabernet sites, in this case, Red Willow and Ciel du Cheval vineyards. The wine has ample power and ripeness but reveals itself as a savoury and mineral-driven Cabernet. Aromas of desert sage and violets give way to ember, stony minerals and sappy notes of ripe berry. The palate shows plenty of depth of fruit. Black plums and fig flavours are lifted by the wine's savoury character. Wild fennel, dried herbs and mocha complement a tangy berry-driven finish.
