The Northern blend is all Syrah with 5% Viognier in a co-ferment, giving great savoury aromatics of dried lavender and desert scrub with ember, crushed stone and violets. The palate opens with blackberries and mint, briny black olive and a streak of smoked sea salt minerality adds to the umami-driven profile alongside smoky soy notes. It finishes with structure and lift framing black tea intensity.
