The idea behind Penfolds’ vision of an ultra Californian Cabernet Sauvignon has taken several years of evolution to hit its current high-water mark. The addition of 7% Shiraz from Penfolds’ South Australian vineyards injects luscious red-fruit generosity, and it’s surprising how much influence that component has on the finished blend, bringing liveliness to the dense Californian frame. The resulting flavour profile is clear and cohesive: a rolling melange of plum over fresh blackberry, with pleasing savouriness and a lively spicy note on the lingering finish, supported by oak that provides a subtle binding frame. Wound tightly and a bit closed at present, it has a seamless palate weave that will remain true as its stoic posture relaxes over time. Released at £545.
