‘The idea was to study the stay of Custoza in wood,’ said Marica Bonomo, explaining that the winery engaged a consultant from Alto Adige, where there is more experience of working with white wines aged in wood. After three years of experimenting, they discovered that French tonneaux worked best. A rich, complex yet fresh and breezy nose of bruised apples, apricot skin, white peach, mango, almond, wild herbs and a stony hint leads to a full-bodied, intense, textural palate with beautiful precision of apricot skin, nectarine, salinity and stoniness. Hints of citrus peel, melon and apple emerge. Succulent and fresh, it displays some lovely sweet floral and limey overtones on the finish.
