Bisol opens restaurant on Mazzorbo

Premium Prosecco producer Bisol is set to open a restaurant at its new Venissa estate.

The new Ristorante Venissa will take centre stage at Bisol’s estate on the Venetian island of Mazzorbo, which includes a walled vineyard, vegetable garden and an orchard.

Managed by Paola Budel, who trained under Michel Roux, the restaurant is set to feature cuisines ‘that interprets the authentic lagoon culture.’

Bisol also plans to make wine from the vineyard, which is planted with Dorona, an ancient Venetian white grape variety.

Gianluca Bisol, general manager of Bisol, said that the new estate paid homage to the history and culture of the Venetian Lagoon.

‘It is important that we invest in projects of this level, despite and especially in critical periods such as the one we are currently experiencing. We need to promote the culture, the territory and sustainable tourism.’

‘The Ristorante Venissa represents an absolute novelty for 2010 for the tourism and restaurant industries,’ he said.

  • Bisol will be hosting a wine and food matching Discovery Theatre entitled ‘the rise of Prosecco’ during Saturday’s Decanter Great Italian Fine Wine Encounter at the Landmark Hotel in London.
