A premium Côtes de Provence rosé you won’t want to miss
Whether you’re looking for a top rosé to pair with food, or simply a premium Côtes de Provence wine to crack open with friends this summer, the Château Saint Julien d’Aille, Vin Biologique Côtes de Provence 2025 is one to get your hands on now.
Some 12 miles inland from Saint-Tropez, at the foothills of the Maures mountains, Château Saint Julien d’Aille has been guarding the secrets of Provençal winemaking since the Middle Ages.
A rosé that captures the spirit of Provence
Imagine rows upon rows of vines, nestled beside the tranquil river Aille. Stone pines – unmistakably Mediterranean – soar overhead, casting welcome shade. Refreshing sea breezes temper Provence’s sun-soaked days. It’s as if nature conspired to create the perfect conditions for rosé.
The team at Château Saint Julien d’Aille have never taken this remarkable terroir for granted. For generations, they’ve worked in harmony with the land, applying technical skill and artistic flair to produce a rosé that stands with the best in the Côtes de Provence appellation.

Winemaking with exceptional attention to detail
The 2025 cuvée shows off a meticulous winemaking approach. At the Château, the signature Provence varieties – Cinsault, Grenache, Syrah, Tibouren and Rolle – are cultivated organically in separate parcels. To preserve freshness, the grapes are picked at daybreak, then sorted by hand: only the best make it into fermentation.
When it comes to the blend, the varietals are layered deftly, then bottled on-site. This creates an architecture of aroma that reliably excels in tasting – the 2025 achieved a score of 94/100 in a Decanter panel tasting of Provence rosé in the June 2026 magazine.
‘This rosé is designed to be a wine of precision’, says Jérôme Paquette, the expert winemaker behind the Château’s consistently premium quality. ‘Each varietal plays a role in the overall piece, lending balance and freshness.’
That exceptional balance reveals itself on the nose – a gorgeous mix of ripe apricot, citrus zest and white blossom, as well as delicate touches of spice.

A rosé to pair with food
Like any premium rosé, it is wonderful shared with friends on a June evening – but it would be a tragedy to limit this wine to summer aperitifs. This is a wine made for food pairings, supple on the palate, with delicate balsamic notes that evoke garrigue.
As you’d expect, this rosé matches deliciously with ratatouille, or grilled sea bream – but also asian-inspired dishes, thanks to its subtle spiced aromas.
Alongside their exemplary rosé, Château Saint Julien d’Aille have applied their spirit of innovation to new wines, with their refreshing sparkling white Palatium Blanc de Blancs now available to buy, as well as a remarkable alcohol-free rosé, playfully named Pinky Bubbles.
Even just opening a bottle from Château Saint Julien d’Aille brings a burst of Provence into any occasion – but you can get even closer to their fabulous landscape. The Château offers premium accommodation: with four exquisitely renovated gîtes on-site, you can plan your escape into ultimately Provençal relaxation.
With bookings open now, you can make your getaway into that peaceful sunshine – with, of course, a chilled glass of their premium rosé in hand.
