Domaine Bouché, Etre à L'Ouest, Limoux, 2017

It's from Limoux and under a crown cap – but it's not a crémant. Bruno Bouché, originally from Champagne, does indeed make sparkling wines, but this is a still Chardonnay: unoaked, unfined, unfiltered and, as the name suggests, just a bit crazy. Ripe, chalky, green apple purity is joined by fresh acidity and a lingering finish.
