Known for its chalky soils, Pouilly-Fumé produces some excellent Sauvignon Blanc. This example, made by Caves des Vins de Pouilly-sur-Loire, has a grassy, faintly chalky aroma with a streak of herbs. A good intensity of citrus and herbs emerge in the mouth, with a touch of peachiness and bright acidity to finish. A classic pairing with goat's cheese.
