The Tokubetsu Honjozo of Akashi-Tai ('Tai' refers to Japanese Sea Bream) is made using the Gohyakumangoku rice, sourced from Niigata and milled down to 60%. Light and dry in style, it has a nose of fresh pears and banana, with honeydew melon, grapefruit peel bitterness on the creamy palate, with citrus acidity to balance. The finish is dry and clean.
