Ice wine is expensive to produce as the grapes are left on the vines into the winter and picked when frozen, leaving tiny amounts of concentrated juice to be extracted. Niagara's Vidal grape lends itself well to the style, producing an intensely sweet and viscous wine, golden in the glass, and with flavours of overripe peach and cinnamon. This would go down well at the table with blue cheese – or for the sweet-toothed, perhaps a pineapple upside down cake.
