Nigel Chan, head sommelier of The Eight at the Grand Lisboa in Macau, is a judge in the Decanter Asia Wine Awards (DAWA).
Nigel is currently the head sommelier of renowned 3-Michelin-starred restaurant, The Eight in Macau. As the Head Sommelier, Nigel is responsible for the selection, maintenance, sales and presentation of the wine cellar and wine collection. Nigel works very closely with Executive chef and restaurant manager tailoring menus to pair with the wines as well as selecting and procuring the finest wines for the restaurant.
Nigel brings with him more than 10 years of experience in the wine industry. Prior to his appointment at Grand Lisboa Hotel in 2014, Nigel was wine director of a deluxe 5-star hotel in Hong Kong. He has previously been invited by universities and wine schools to be a guest tutor and professor in delivering talks and speeches during important wine events and classes.
Nigel began to discover the virtues of wine during his education in Paris. He has worked with well-known wine merchandisers including Altaya and One Red Dot in Hong Kong.
